I'm looking into transmissions as nobody wants to buy my car so I'm fixing and keeping it I need:
Automatic transmission options for my gt and manual transmission options that will work and if it's a different transmission then stock can I get a list of what I'd need to get for the swap to work if anything

Being your on a budget. Just go to a junk yard and replace what you have in the car. That way your not replacing a bunch of other accessorie parts. Lots of transmissions will work but none are entry level budget friendly. I have a built C4. Good drag racing transmission but you need to get a transmission, shifter, correct flex plate, etc. to go that route. It adds up quick. Another cheap option would be to get a T5 manual. They can be had for as low as $200 and I've read that the swap is fairly straight forward..

I keep hearing horror stories about doing auto to manual swaps... And get yelled at for even mentioning it... And I would need a drive shaft that fits as well as a clutch pedal assembly so I guess my two question with manual swapping is what would I need because I'd prefer that honestly it's more fun

The manual and automatic different length transmissions and where are you located I would come for a t-5 if I had to because they ain't cheap near me
What manual trans is in the v6 mustangs and would that work because there's more then enough of those around me for 800 or less that I could buy replace parts then scrap or do some cheap fix and sell or part out if I had to
