Default Oil Temp vs. Water Temp

If I were to get an aftermarket gauge to monitor engine temperature would I be better off getting oil temp or water temp ?

Whatever bolts to your car direct, manual most likely.

Get an electric water temp gauge. Electrics are a lot easier to install than mechanicals. Also, you're going to be more familiar with the temp's you see from the water temp gauge as it will relate directly to your thermostat temp. It's a good idea to monitor that temp to quickly notice a bad thermostat. If you have room, add the oil pressure then oil temp gauges...and I'd get a tranny temp gauge before engine oil temp if you have an auto.

I agree here too. Electric water temp gauge first, then if you had to get a second gauge I would get a good oil pressure gauge before I got an oil temp.

Is it hard to tap the engine block for the senders?

Depending on your manifold setup, most have bosses and/or prethreaded ports to add a sender for a mechanical gauge.
