I agree with several others and think Coupes look best one color. There are several colors that would look nice. Perhaps you can find an original color you like, if not from 68 then maybe another year. Check out most all the original colors here:

I think 1966 Sapphire Blue looks sweeeeet. Here is a decent example, this color was a special order for 1966, it was primarily a T-Bird color but according to some was also used on Shelbys.

Yeah, Chillins example of a bright blue goes into the mix I said about reds, yellows and blues for bright colors. His example of a white vinyl top sucks though.
