How long can she sit?

How long can she sit?
I have reached a point in school that I have some time to work on my car. Unfortunately, my shop is not done yet so the car is in my upstairs car port with no door. I would like to go ahead and strip it down but I am afraid to leave it exposed with no paint or anyting during the winter months.
I can put a cover on it but the moring dew might still get on it. Is flash rust an issue or can I go ahead and strip it down and put some kind of cover on it while it sits?
Also, is it better to strip the car down before I straighten fenders, doors, fix dents, etc., or wait until all that is left is patchwork (like fiberglass, bondo, etc.)?
Everything has to be done and I do not know what order to do it in. HELP! Thanks.

Sorry,, couldn't resist....
Keep the car covered, keep the bare metal primed, and you will be fine, I don't have huge issues here in NM, and it is my understanding that GA is now dryer than NM....

Never strip a car unless it has been painted over and over. Ask around and get opinions from body shops before you do itall the way to the metal. You will be shocked at how much **** is in there from the factory. This of course depends on the year of the car.
