Default Larger carb on my I6

So the autolite 1100 on my 68 I6 is giving me tons of trouble and has to be adjusted constantly, as such I bought a 2bbl 350 adapter via advice from here. I cant seem to find a new holley 350 for under $375, but found a great deal on a 500 cfm for somewhere in the area of $150. If I go with the 500 can I tune and jet it down to work properly with my I6 or should I just spend the extra $200 on the 350? If I go with the 500 whats the worst that can happen? Thanks again for everyones advice here

I have a 350cfm 2bbl manual choke. Bought it to use on my 200, but got my other 2bbl tuned correctly. Was told it might need a rebuild since it hasn't been used in a couple years. If you want pics of it PM me.
