Default Carb and floor pans for 1966 coupe

Ok, so, I have a couple of dilemmas, and I'm not even sure what to ask.

First, the easy one. Pretty much my entire floor pan, under the back seat, and trunk are rusted out. Any advice on floor pans that fit really well? I'm hoping to get it in three pieces rather than the full thing since my body guy said it'd be easier for him to put in. (It also appears to be the cheaper option.)

Second, the harder one... Basically, from what the mechanic said, gas is constantly pumping in because the carburetor thinks it's cold. It's blowing He said something about getting a longer heater hose and running it to the back, but I don't even see where it would hook up. Also, there's a tube that's been pinched off. I have no idea where to start with this. A rebuild? Choke? Adjustment? I at least would like something so I don't get completely ripped off if I end up having to take it to a mechanic. (I'd rather learn to work on it myself, though.)

I'm attaching pictures of the carb so you can see what I'm talking about, because I honestly don't know what I'm looking at, really.

Sorry, *It's blowing smoke, but I don't know what color. No one will tell me, and I can't start it up at the moment because I snapped some wires while trying to upgrade the lights. Waiting for the new harness to come in to redo the whole thing since it seemed like a good time to do so, anyway.

That pinched off tube is a heat tube from the exhaust manifold. Inside that plastic circular housing is a bi-metal spring. When cold the spring holds the choke closed. As the exhaust manifold heats up hot air is drawn into the housing causing the spring to revolve and open the choke. Either you need to reconnect that copper tube or convert to an electric or manual choke control. The electric replace the one you have and starts to heat when the ignition is turned on. After a small amount of time, minutes not seconds, the element gets hot enough to rotate the spring and open the choke.
You need to get a manual for your vehicle, about $35 on ebay or from forel publishing.

convert it to full electric choke the heated tube is pinched off because I see you have a header vs a manifold which had the provision for the heat riser tube

It's a manual. Got an electric choke from classic inlines, but I haven't installed it yet.
