It's pretty easy to change disc brake rotors/pads yourself, You can get new takeoff rotors from Roush feebay store, new pads and watch youtube video's to see how it's done.

If you don't want to do it, I'd get the rotors and take them to a shop and have them install them with new pads. As cheap as those Roush rotors are I would not pay to resurface your's.

Look around and find a shop that wont charge $600 to do disc brakes.

Agreed. Brakes seem intimidating, but they're actually very easy and almost foolproof. Plus when you're done the feeling of accomplishment is nice the first time you do it. In addition to that, you get to look under the car and you can really see all of the suspension components etc and you'll gain a better understanding of your car. Ask a friend to help if you're that unsure, disc brakes are so simple that even someone who changes them on their Honda could look at the Stang and get them done. Parts are cheap and they kill you on labor at a shop.
Look on the forums and find somebody close, beer and a pizza get a lot done!

Although I'm not adept at doing brakes, I probably should learn, considering I'm (down to) maintaining 3 vehicles.

If I HAD to take it in for brakes, I'd suck the big one and have the dealership do it UNLESS I knew the monkeys at the local Midas and what-have-you brake joints had half a brain. I've had more than my share of problems at brake joints where the monkeys let the jack-azzes take care of my cars. The dealership may be more expensive, but they've seen a lot more Stangs than other joints.

I watched a youtube video and did my own without too much trouble. My only issue was trying to get the rear rotors off the car, they were rusted on hardcore.

You can rent the special tool for the rear from Autozone for no charge.
