it surges up an additional 500 rpm?
my guess would be since the engine is no longer connected to the tranny when the clutch is pressed, it is easier to idle and will jump up a tad?
is everything connected? i think the last time i did this, i had to calibrate the IAC valve. this was on a 3.8L '93 thunderbird though.

The hissing noise could be a vacuum leak. It could make it rev higher in between shifts to make up for the leak. Check all the HOSES for a disconnected one, even on the Driver side for air hissing under the hood.
