The lack of the premium package certainly makes me lean towards the i4, but the V6 is more fun to drive, IMO (I test drove all 3 before going with my '16 GT). It comes down to if you want leather, heated/cooled seats and that premium sound, I suppose. Forced induction (gasoline) engines do tend to not last as long as naturally aspirated ones, so definitely keep that in mind if you're planning on keeping this for 120k+ miles.
Also, for what it's worth, I do a combination of city and highway driving and I average around 20-23mpg in my '16 GT using 93 Octane fuel. When it's below 40f outside my gas mileage tends to be a bit less for whatever reason (likely due to the affect on fuel burn).

It's probably worth noting that, on the i4 Ecoboost, a tuner and a CAI are dropping people all the way down into the 12s for 1/4 mile time (12.9 seconds IIRC)... What this does to engine life though, I have no idea

the engine is plenty strong to handle that; with boosted engines, it's all about preventing detonation.

I just purchased my first Mustang, too. I chose the EB over the V6 for the fuel economy, and got the manual for the driving experience. And I haven't been disappointed! It has enough power to accelerate around slow movers and gets the gas mileage I need. I get around 32-33 mpg on the highway, and around 25 in the city. It's a fun ride and I've only been looking into improving the sound to get more bass (a sub may be in my future).
Being in OK, you may want to look around for better pricing outside your local area. I did (flew there and drove 8 hours home) to save $3k.
