A few reasons not to do it on a stock or only mildly modified engine:
1) you'll lose too much low end torque due to having almost no back pressure
2) you probably don't have enough high rpm HP in your motor, or the correct gearing, to compensate for #1
3) your exhaust system helps remove unburned gases and heat from the engine; cutting it too short will inhibit this heat extraction and could cause internal engine problems, specifically with the exhaust valves
4) it really won't sound all that great - even open exhaust race cars have tuned, equal length, and/or long tube headers, which help somewhat with the heat extraction and sound; you'll probably have your Mustang sounding like an old Chevy pick truck with a huge hole in the rusted out muffler....
If you did try this though, I'd be interested if you proved me right or wrong, because this is all educated theory; I've never actually tried it.

Not to mention that without almost any backpressure the heat that will be pulled through the valves while running. Stock valves will burn (in most cases anyway). You would need aftermarket hardened valves designed for those conditions.
Oh, yeah. I vote valve damage. Plus alot of nasty carbon buildup under your car, exhaust fumes in the cabin while sitting still and least least one or two good tickets.
