When a push button start is installed in the s197's, can you still start it with the key or is the key only used to unlock the steering wheel?

Depends how you wire it.
You'll have to use the key tooperate the ignition circuits, but if you wanted, you could disable the key from activating the starter motor.
It's easier to let the key wiring alone and merely have the button activate the starter as well as opposed to instead of.

Yes you can still start with the key...

I'm looking into it, but as long as the wires are spliced and not cut. The key should still start normally also.
