Brake kit
That's because the majority of the braking load rests on the front calipers. i'm guessing that Baer, Steeda, Brembo, and other manufacturers don't develop rear calipers because poeple won't notice much of a difference to justify the cost.
they do make them try SSBC, there are others but that's what comes to my mind right now, i was searching this and these were about the cheapest, total about 2500 for front and rear 13" but they make 14 also. i'm sure baer, brembo and the others make them too.
If upgraded my brake kit I would just change the rear rotors to match and keep the caliper since I believe it does a good enough job for rear brakes. I would just paint it to match the new ones up front. But if you could find a complete rear upgrade kit that significantly increases performance over the stock rears that would be pretty sweet.

the only kit i would go with is the AP rear brakes offered by stillen. they are specifically designed for s197 mustangs and retain the factory e-brake. all other kit you loose the e-brake. they will set you back about 3K though. check them out @ www.stillen.com
