Talking sluggish

i have a 07 gt. i have had it for 6 months and live in NY. so basically since i had the car in the summer i would start it up and take off with no problems of any sort. since it is starting to get cold up here in NY when i take off in the morning my car still feels as if the e brake is on. (its not i double check) what could be my problem. i have let the car warm up for 10-20 min prior to leaving. any suggestions?

Maybe let the car warm up before you go. Let the idle settle down to normal levels. See if that works

Disconnect battery for 20 minutes and then try it again.

Make sure that you didn't break your e-brake cable and the brake is still actually set. Do you notice any other drag issues aside from startup? It's a known issue for the e-brake to get frozen during winter.

Your e-brake cable is frozen. Either don't use the e-brake, or take it in to get it fixed. There is a TSB out there for this. Your other option is to manually dry the cable or just wait for it to defrost with the car on (this can take a while). Don't drive it while its like this though.
