Alright so I just ordered some new Mickey Thompson ET Street Drag Bias ply 27x10.5x15 for my 2012 GT.

Question is, if i run those tires with the stock fronts, am i gonna kill myself in the 1/4?

It's a drag racing only tire, dry pavement use only. So yes you probably will.

Drag cars typically run tires with a MUCH smaller contact patch than your stock fronts so why would it we any worse?

It will only be unstable if you run bias ply in the rear and radials up front. If the fronts and rears are both radials you will be fine, I ran like that for years. DR's in the back, stock tires in the front.

the backs would be bias-ply with stock tires in the front.

You will be fine, I don't see a problem there is a ton of people that run DR's out back and stock/radials in the front.
