409 stainless is the worst thing you can make headers out of. The material is too thin and brittle for the welds to hold and 409 will rust like mild steel. Either get 1304 stainless or get mild steel, stay away from 409 stainless.

Use Ford OEM gaskets when you install the headers, whichever headers you decide.
