I have run this by a couple of people that I work with and its pretty 50/50 there...
Should I have my stock wheels powder coated white.. I think it would look good, but I'm a little worried... I just have this image of the 2002 Saleen white on white stuck in my head... That car is so sick.

I think if you did powdercoat the rims white, you would absolutely NEED some contrasting color to break it up... You don't currently have rocker stripes, so a nice black set would compliment the white of the car and wheels if you go that route.
They make a white colored plasti-dip. You could experiment with it and see how you like it first before committing to the change.

I've seen plenty of white on white cars and it looks bad imo. white wheels are incredibly hard to keep clean, too. they will almost always be offwhite and caked with brakedust.
personal opinion - I would save the money you'd spend to make those white, and put em towards another set of wheels all together - but it is your car so do whatever you like best!
