hi i am about to join the military for four years and when i got back i plan to purchase a 1990 to 1993 mustang and replace the old engine with a 351 windsor. my question is i have very little mechanical experience and i was wondering if i could do this or does this have bad news written all over it? i had also planned to bore and stroke it to a 408

I would go ahead a buy the 351 block. Work on it over time. If you're stroking it and have no mechanical knowledge then I would save up and have a well known shop build it. Balance and blueprint it and you'll have one hell of a beast.
