Default Carburated? efi?

in my quest to find the right engine components and price's i have had thoughts about possibly going with a carburater set up? what do you guys think would this not be worth it? i know efi engines generally are all around better on gas and i depends on who you as a efi guy or carburater guy, what do you guys run? how do you like the set up or past experiences. i have only had efi on the two mustangs i have owned but had a carburater on my first muscle car.
