The third piece is not mandatory to get the grill delete (or mach 1 look) but it does give the car a more finished or factory look when the hood is up.
You can see it with the hood closed too but you have to look in there.

I have the 3 piece grill delete, and its deffently the way to go. I got mine from Classic Design Concepts, and it was around $70. Adds a great look to the front of the car, but spend the little extra money and get the 3 piece kit its well worth it.
you can usually get these on e-bay.
