easy way is a short block does not come with heads and intake and all that stuff whereas a longblock is a complete motor.

the difference in a small block and big block is just like it sounds, small blocks are smaller and wiegh less with less displacement compared to big blocks. I beleive the cross over is around 400ci but there are some big blocks with less than that

Big block vs small block is based purely on physical size. Displacement is not a consideration, though big-blocks will typically have more displacement, although that is not a rule.

A big block is heavier, but since it puts out more power than a small block, could a big block beat a small block with less power, even though it has more weight? (given that its the same car, with stock everything, i.e. an 01 GT if it could ever be done)

eh...its a hard question, but im going to make my stand on NO...because while it can make more power easily, it normally does not have as great a power/weight ratio or power/liter ratio...what i've always known big blocks for is MAD low-end torque

Close. I have Never seen a long block as a compete assembly. That usually falls under the crate motor category
short block = block and rotating assembly. meaning cam, crank and pistons
long block= block, rotating assembly and heads sometimes valve covers but not usually. You don't get any accessories or intake with a long block.
