Get the tuner.. and depending on what you plan on doing get anywhere from a 3.73, 3.90, 4.10 or 4.30... if you're going to stay N/A i vote for 4.30's but you'll need some tires :-)... If your goin to run a modest s/c boost eventually, go 3.90's.. if you're going to run real boost - go to 3.73... if you just want something to go a bit quicker and dont really plan on doing much else modding - the 4.10 is a good gear.

I'm trying to get 3.90's or 4.10's for my '03 GT, but when i shop for them they are broken down by 7.5" or 8.8". How do I know what my almost stock stang needs?

If its all stock you have an 8.8' rear with Traction-Lok (posi) and 3.27:1 gears
