Default Question Regarding Procedure: Help

Ok guys I will get to the point. I have a 99 G.T 4.6 Winsor Block lalala without the aluminum crossover. I went today outside to install my 180 thermostat I purchased. I simply removed the two bolts and the cap during this I lost some coolant not alot, but some....I have two questions:

1. I simply pulled the old thermostat out and drop the new one in..then started the car forgetting to put water (what lil I lost back in the reservoir. The car ran perfect temp, but then I noticed the engine light was on you know the one with the fan and motor. I was like **** I forgot to fill it back up with water (what I lost) So i returned and refilled the reservoir with water until it was to the top. I got back in the car drove it down the road and the light is still on? what is the deal?

2. When I bought the new thermostat it did not come with a gasket or anything and I did not even bother to permatex the cap because it appeared that is the way it is designed. I am not loosing any coolant???? Did I do that correct?
