definitly change valvesprings anytime you replace the cams just to be safe. And you might wanna look into Cushman Motorsports. Jim makes some pretty awesome cams and he can grind you some custom too.

It's never a bad idea to change the springs! While not really necessary on "some" smaller grinds, it's almost always recommended on larger ones. So it really depends on what profile you plan on running.
Is your car n/a? Will it see forced induction at some point? These factors are very important when selecting the proper specs. Also weather you decide to degree your cams (you really should) or not should also be taken into consideration.
If you don't want to run into possible ptv clearence issues (this is one of the drawbacks to the pi heads) i would go with a custom grind! There are too many off the shelf cams out there that are cutting it way to close!
Now if you don't mind notching your pistons, then you can run more agressive profiles, and not have to worry about ptv issues.
Obviously the more agreesive profiles will have a lumpier idle, but a good tuner can make a smaller cam idle like a bigger one, and vice versa...within reason of course!
