Default Brake Caliper Bracket Contacts Rotor without Shims and Eats Pad Clips

I have a ‘00 GT that I swapped a 2003 Mach 1 rear end into. Axle came with Mach 1 axle tube bracket mounts so I upgraded to the bigger Mach 1/Bullit Rotors and Mach 1 caliper bracket after running the GT rotors and caliper brackets until it ate up 3/4s of my pad 🤣 Had no problem with GT rotors and brackets just not spaced correctly bc of the Mach 1 using a taller rotor. After swapping to all Mach 1 hardware the outer of the bracket would contact the rotor so I shimmed the top and bottom of the bracket. Any fix to this issue of using shims or eating pad clips? My car likes to eat brake pad clips and am wondering if this is my issue. Thanks.
