What would cause the exhaust to rattle?

thats probably not what is rattling. i could be wrong, but i dont remember seeing any shielding riveted to the underside of the body.
i'd be looking for loose flanges, broken hangers, maybe the mufflers are hitting the driveshaft. stupid stuff will cause rattles.

my cat shields were rattling too before i switched to an offroad midpipe. I find it hard to believe that 2 thin pieces of metal that's not air tight to the cat is going to hold in any significant heat...

they're not meant to hold the air, they're meant to move it away from the underside of the car.

they are there for exactly the reason they are named, heat shields. if the underside of your car is a sloppy mess, and your running cats without shields, be prepared for a fire.
Idk man, the shields i had wouldnt prevent a fire, they were horrible. Only thing i could see it preventing a fire is if you parked on a huge pile of dead grass, then maybe it would stop it from catching fire.
i've personally seen it happen to a buddy of mine's prelude. we were driving the car to the new owners house when the underside of the car caught fire, from the heat shield being removed and an oily greasy mess on the car. we had to pull over and luckily i had a couple water bottles, we were able to get it out while the fire department woke up and got there.
