Default getting alittle hot?

I have a 89 5.0 mustang (sorry for posting so many threads here lately, but I just got the car and need help) It has some engine mods such as e303 cam and some ported heads and a few others but...He made a special thermostat for it to stay cool (drilled holes in it he said?) It stays cool for a very very long time.. at times too cool!! but after driving it for over an our it climbs up pretty high heading towards the red.... I noticed this first when i was on the turnpike going about 70-75... What should I start with where should i go from here ??? THANKS!!

Exactly what moocow said with the addition of a new water pump. That way even if it isn't bad (which it could be) it will go bad and you won't have to do it later.
