No oil pressure at idle
Car is a 91 GT, had the intake manifold swapped to a gt-40, came out of the shop, and had 0 oil pressure. got a new Oil pump and sending unit, a long with a hydraulic gauge. Shows no oil pressure at idle but will go up when throttle is engaged like normal.
It's my friends car, i suggested trying to bleed the oil pump.
suggestions?

I've heard of the galley plugs popping out and causing no oil pressure. There in the lifter valley and behind the timing chain if I remember correct. Someone else may know more about this. IF they didn't touch the block I wouldn't suspect it's anything in the bearings.
Whatever the cause may be, I would have to question WHY it was like this after he got it back from the shop.
Maybe after they swapped the intake someone decided to "test" it and drove it kind of hard, causing a plug to pop out.
Chances it would have happened anyhow at some point but it shouldn't be because of them.

You can always pull your intake off and check the galley plugs.
Your saying there is no knocking or rattling. That makes me wonder if the oil pressure reading is even right because if the pressure was 0 or low you should hear some knocking, rattling, etc.
