aluminum cools better, and is lighter. If you live in a place that is hot most of the year, you will appreciate the aluminum radiators cooling capacity. Same with a large engine, or lots more power than stock. I only put aluminum radiators in now, but brass/copper still works and is usually cheaper.
2,3 and 4 row means how many tubes are stacked front to rear with fins attached. More tubes means more surface area for the heat exchange. More surface area means more cooling capacity. Cars with air conditioning and or alot of power will stay cooler with more rows. If you have a stock 289 2V with no air you would be just fine with a 2 row. If you plan to upgrade to a 390/428/429/460 then a 4 row would be better.
It depends on the engine, the location and temp of where its being driven, and the type of fan being used. If you live in Calironia or South Carolina where traffic sucks by virtue of being sit for 20 minutes at a stoplight in 90+ then a larger radiator is a good idea. If you live in Maine, or Minnesota, you can get by with less radiator because its normally cooler and there is alot less traffic.

I can't see spending the extra money for an aluminum radiator on a stock daily driver. Either a 3 or 4 row copper/brass core rad is fine. If it is still overheating, there are other issues and not the radiator. But, if an aluminum one is what you want, then a two row will work just fine.
