I just finished replacing everything between the wheels of mine - excluding the rack and steering box. I spent about 600 bucks all said and done. That's w/ a new export brace.
As far as what you should do with the new pony? That's all in direct relation to how much money you want to spend. Are you asking what you should do to keep it sound as a daily driver? or asking what you should do in the first steps to reso - resto/modding it?
Both are very different.
i vote u keep it and stuff it full of parts from www.classicinlines.com and also check out www.fordsix.com
make sure everything is up to parr....and keep as is ....save money and buy something already in the V8 area....why change something that is working? you must have liked what you saw, you bought it.....just a thought............
Keep the 6, drive it and enjoy it, rfind all the info that you can on 6 to V8.. convertion=a lot of money and work and if some day you decide to sell it many buyers will look for something factory original..wait, safe your money, drive this car and wait for a V8 if it is what you realy want..but that is only my opinon.

the restomod thing is too big now...i dont see concours s cars being all that popular anymore....maybe its just me but i think its safe to say, if you do the car nice and with a V8, it will be worth more than an original condition I6.....
