'66 6 cyl carb advice
I've used the Clifford 2bbl adaptor on one of my other vehicles (an 85 F-150 with a 300 I6), and am happy with it. I put a 2bbl 350 cfm Holley on top of it.
I was able to use the stock throttle cable and bracketry, it was a really simple swap. Dunno if it would be as easy with the setup from the '66 or not.
The truck originally had the Carter YFA electronic feedback 1bbl carb, what a POS that was...

No, and... um... No.
Go spend some time at the Ford Six forum I linked above.
BTW: there is nothing "nice" about the stock Autolite 1100 carb. It was a piece of doo-doo when it came out, and it still is today. It belongs on a farm tractor not a car. Of course so does the head. Another one of Ford's "better ideas"...yeah right [:@]
Anyways the car will run in stock trim, About like a 2000cc Pinto. Well maybe not quite that nice.
Mustang boy, I take it you've done this modification? what did you do for throttle linkage, and an air cleaner to fit under the stock hood?
What kind of difference did it make in your fuel mileage? What kind of mileage did you get before? And what kind of mileage are you getting now?

yes i did this mod but with a holley 500cfm but i also have many other mods to the motor and before i put the 2brl on it i was using the stock 1brl that none of the adjustment screws worked on so it was always running rich and i couldnt adjust the idle so i was getting about 12mpg and now with the new carb i am yet to fill it up and see how long it lasts but i think im in the 15-20mpg area(if i drove right but its hard for me to keep my foot off the ground so it will prolly be lower but its just cause of the way i drive) and for the throttle linkage i made a custom linkage using the stock arm and adding alot of things and bending the hell out of it andmaking a frame that i could put a bar on and used the bar to move a steel block which moves the accelerater on the carb it is a very complicated to describe and im not the one who came up with the idea my moms boyfriend did and we built it together and it works great oohh yea im running a holley 4412 and i went to the parts store and picked up a Mr. Gasket aircleaner for a Holley but with the wing nut i got i had to find a shorter aircleaner which i did but with the wing nut that comes with the Mr. Gasket aircleaner kit u should have clearence with the stock hood
hope i helped

After going through all that, I realized it just wasn't worth the trouble. I put a fairly stock head back on and turned the trunk into a giant ice chest. It always made it to the parties before the ice melted, and the money I saved in gas paid for the cold drinks

So I decided to hack the head apart and build my own manifold. What a learning experience that was!

Good stuff. You used the trunk as a giant ice chest?? You sure you weren't driving around a 1972 mustang hardtop at the time? Using the trunk as an ice chest might explain why the rust in the trunk was so bad that it actually ate through the top of the gas tank.

my dad actually had a big chevy that he hacked the roof off of and took the rear seat out and filled the rear seat area full of ice all the time and would carry kegs to parties and wut not he told me one time he was going about 70 and som lady ran a red light and he hit her and split her car in two while having the rear full of ice and the keg and he said there was ice everywhere in the intersection
he was found not to be at fault and was able to leave scot free

Based on what I've read and think I know (that's questionable
), a 500 cfm carb on a 289 is questionable with a stock cam, least of all using it on a 6 cyl. I've been told by two people whose opinions I respect and by an older gentlemen at a car show with a totally awesome modified 66 Mustang and a stock 66 Mustang that you don't want anything bigger than 450 cfm with the stock cam on a 289. I can't imagine that you would want to go bigger than a 350 cfm carb on a 200 ci, 6 cylinder.
