find a way around it. will you not have enough clearance just by removing the radiator? if all else fails can you take off the grill and come out the front? if you unhook it, you'll need an a/c shop to suck down the system and recharge everything and that would just suck if its not needed.
Definitely don't undo any a/c stuff. If you don't have enough room by pulling the radiator (I did on my '68), my best suggestion would be to loosen the a/c condenser, but lay it forward rather than unhooking it.
Last time I did just a cam was awhile ago and I do remember a teeny-tiny clearance problem, but I don't remember how I got around it. Either I was just super-patient and maneuvered the cam out very carefully or perhaps I had to get a jack (with plywood) under the oil pan and pretend like I was changing out a motor mount to make a little space.
If it turns out you do have trouble, just relax and think about it for a few minutes. Have a beer or something. Don't freak out. People swap cams all the time. It's not hard, but it might be a tiny bit tricky. I used to easily do them in a weekend. Park it on Saturday morning, test drive it Sunday afternoon.
