I replaced the buns and covers on my 67 a few years back. It can be done, just takes some time and patience. About the only tools you need are hog ring pliers and hog rings. The following link from Mustang Monthly was very useful. Replacing the foam buns was the best thing I ever did. We drove from Cleveland to Nashville for the 40th Anniversary and the seats provided perfect support and comfort. Good luck and just take your time.

I recovered my seats during the Christmas holidays. I took pictures as I took the seats apart and loaded them on the computer for reference during reassembly. I suggest having an extra pair of hands while attaching the hogrings, one pair to compress and stretch the fabric while the other clips the hogrings.
I used hook latch rug backing to replace the rotted burlap.
