Yes it's possible and has been done before but it's pretty pointless. It costs more than just buying an actual fastback, doesn't have the value of an actual fastback, you risk a lot of structural problems even if you're great at body work, and most can still tell it was a coupe. There's a kit to convert to a convertible (Ronster from MP) and it's pretty ugly but I've never seen one to conver to a fastback.
the ronster isn't a convertible kit, its a speedster--NO Top at all.
Those are reffered to as "roadsters".

The only good kit they sell, IMHO, is the retractable hard top because for the simple reason of It was an original Ford idea that was never produced due only to the fact that they couldn't motorize the hardtop as they could on other models.

I wouldn't count on the first, and "covering it up" will hide the mistakes. If you aren't having a high-end shop do the work don't take anything for granted where the car's structure is concerned. I'd trust the SN65 shop, partly because I know that the people there aren't afraid to seek engineering help with that sort of thing. And there are a few individuals whom I'd put in the same category for similar reasons.

+1 with Kalli. The price of my coupe goes up ever so slightly with each conversion.
