Any web site that posts the production #'s in more detail. For example how many 66, GT, Deluxe, Pony Interior, Auto Trans, ?? exterior color, were produced?

I've seen the posting that breaks out Coupe, Fastback, Convertible, etc.

I'd like to get a better idea of how many 66's like mine were produced to help in decision to restore to original configuration or modify.

No assembly line or production dat exist for any Ford built in 1966 and earlier. When Ford converted its data base to tape (it was IBM 5081cards), the made a decision to load on 1967 on. The only information that exists is sales and marketing figures which are only percentages.
For 66: GT - 4.2 pct; automatic transmission - 62.9 pct; air conditioning - 9.5 pct; radio - 84.6 pct; disc brakes - 1.9 pct; power steering - 29.0 pct; vinyl roof - 11.5 pct; power top - 7.5 pct.
That's is it. However, in the Mustang Production Guide, Vol 1, there are statistics for the cars that have been entered into that data base but they are also percentages.

Get a Marti Report. That will tell you exactly how many 'Stangs were made with every one of your options. It's a cool thing to hang up in the garage or an office too.

 

Except the Marti Report does not cover any Ford built before 1967.
