I'm planning to use one of the modern sound deadeners like dynamat. Do you still need to have the original style underlayment with this? Will there be fitment problems with the carpet?

I'm planning on using fatmat or the like as well as the underlayment. Its not that expensive, will added to the heat/noise protection and give a softer carpeting. My understanding is that most of the carpets are slightly oversized and need to be trimmed anyways. Also if there is a fitment issue around the edges due to the carpet being to high from the underlayment I can cut the underlayment back a bit for proper carpet fit.

Yeah you need sound deading or buy some ear plugs. The stick on mat type there talking about is a lot better then the oem kind since you can cover spots the factory ones don't.
