Default First Project Car

I just picked up my first project car. It's a 1967 Mustang, originally a 4-speed 289. However it has neither a transmission or an engine in it. I'm looking to make it into my daily driver, and to be able to use it in that capacity for 10 or 15 years. So because of what I intend to do with the car, I want to get the best fuel efficiency that I can. I'm not really interested in making it a completely accurate restoration, so what kind of engine and transmission should I put into it to achieve my goals? Thanks.

I would go back to a 289 but if you really want fuel econony maybe a v-6 but that is probabaly quite an undertaking. I guess it really depends on your budget. Personally I would buy a cheap Daily driver and make the Mustang your pride and joy,
