I put 5 leaf springs in and I like it. The ride will stiffen nicely, but it won't raise your car from stock height, but if you have 40 year springs you'll notice a 1-2" difference with any new set of springs. If you really want better suspension, stiffer shocks, sway bar, and other addons will improve the ride too.

PS: Springs can be restored and reshaped, but that's for really rare older cars. a new set of heavy duty leafs is probably $100-150.

I agree with Carlos, unless you have a 65/66 and then 4 1/2 works best. I also would go with a mid-eye (lowers the car about 1") or a reverse-eye (lowers it about 1 1/2" which is my choice for my 66). The car may seem to sit higher at first, but usually drops about 1/2" as the springs settle in.
You will not notice a huge difference. The 5 leaf will be a little stiffer and maybe a bit harsh over bumpy roads at speed. If you were road racing it, I would say 4.5 leaf, with a 3/4" sway bar and a good set of Koni adjustable shocks.
I put a 4.5 leaf on my Mach 1 with a 7/8" sway bar and it is pretty stiff. You can tell a big difference between it and the old stock springs. I would think the 5 leaf would be pretty dang rough for street use.
