Need a little help
I've never adjusted a Holley, but on my Motorcraft 2100 the air/fuel screws are at the front of the carb on the very bottom of it by the intake manifold. They are screws with a spring on them. On mine, if I loosen the screws it makes the engine run leaner, which solved my problem. Turning them to the right makes it run richer.
Every carb is a little different but I would go to Holley.com and under their instructions section you might be able to find a manual for your carb. It will tell you where everything that is essential to tuning your carb is located. That's where I got my Street Avenger Manual.

Thanks guys for all the response, this website has some knowledgeable members. I'm going to play with the carb this weekend and see what I can find out.
As for the fuel gauge it is not the only gauge not functioning properly, the temp gauge stays at cold all the time and oil pressure gauge isn't functioning right as well so could I be looking at an electronic issue not a fuel regulation issue?
As for my reasoning for switching the hood is that I like the look of a scoop or cowl on the older mustangs and was still going to keep mine so the car can stay an original but so I can enjoy the more muscle look while I own it.

Okay update on the fuel gauge issue, after running out of gas last night (and being stuck there for a good hour) I'm taking it in on Monday to my mechanic to have him find the issue and fix it.
I also started to play with the carb and tuning a little and the car starts up and idles a lot better now and no longer back fires out of the carb really however I still can't get any power. Now after making my adjustments if I don't ease on the gas and just lay into it the car slowly goes regardless of how far the pedal goes down and I have to pull back and then ease into it to get the power back. I'm stumped to be honest. And I couldn't locate the screws on my carb to adjust, I found two springs on the driver side of the carb but can't seem to find which way to adjust it, any ideas?

Hey, where are you located in CA,, Ive got the same car, but Grande' edition and would love a mustang bud if you are around San Diego... I could help you out too, ive got the vaccume gauge for tuning and timing light if needed,, also a dwell tach meter..
These guys are pointing you in the right direction, if I were you Id pick up a holley manual and a vaccume gauge at Harbor Freight tools for cheap and learn to tune.. Youll be doing it alot..

I would say that it might have been that your carb flows too much for your engine but I see that you have a 351 so I'm sure that's not the issue. Yeah, go get a Holley manual or go to their website and get one so you'll always have a reference of how to tune it and what each screw adjusts.
