Mine would flicker, but not go all the way off. I resolved my problem with an electronic voltage regulator (under the hood, not on the dash). The old ones had moving parts that caused the flickering.
If yours go all the way off this may not solve your problem.

The headlight switch has a circuit breaker in it that gets old and tired and causes your symptom. Replace the switch.

Changing over to an electronic voltage regulator is a good idea, it will stop any flickering but for lights that totally cut out replace the light switch. The switch has a built in circuit breaker that becomes weak over time and won't handle the current required to operate the headlights.

I see Stepman beat me to it, I guess I gotta type faster so I'm not the redundant one. Next time this comes up I'm just posting LIGHTSWITCH.

I have a friend with a '67 coupe that had that problem. Turned out the wiring going to the dimmer switch had shorted out against the floor pan and would overheat the headlight regulator so be sure to check all the wiring just in case.

I saw this thread and didn't think anything of it. I drove my car last night and the lights started blinking on and off. As mentioned above.....mine turned out to be the wiring at the high beam switch. It was just shorting out against the floor pan.

had a similiar problem with my 66, turned out the high beams switch on the flo0r pan was bad. Be sure to check everything involved in your lighting system before throwing parts at it.
