87 gt convertable. White with white cobra's. Stock interior with white leather. Purchased some leather dye & repair kit to redo the seats in white. According to everything I have read I can make them look pretty good for $90 instead of $1000 for new. We'll see I guess.
Anyway I hate the interior colors, black, red and white everywhere else. I want to put in new carpet. Anyone done this? How hard? Then my next question is what about white carpet? I know it's not pratical but I figure if I take care it should look sweet. I would then change the dash and other components as well.
Need help brfore I pull the trigger.
I will take some pics of the leather seat job....

I redid my white leather back seats a few years ago with a dye/vinyl spray, something I found in a marine shop, never seen it in an automotive store. Not only did it return the seats white, but it also filled in the cracks well too. My fronts were too far gone. I can't remember what it was called, but if I think of it, I'll post back.
If you're going with white carpets, you'll need to find a dealership that can install the "dealer remove carpet plastic" for you. Fortunately for me, I have an endless supply of the stuff. I put it down on the front pockets on every car I work on, & my own. Then, clean up is very simple, you just wipe off the plastic. My dad and I put down 2 layers, wall to wall plastic on a brand new Caddy that was being used as a demo. It had off white carpets, and the lady was a pig when it came to being clean. Took about an hour. Once white carpets get stained or dirty, you're only option after that is having it being redyed.
For your seats, I would also have to say, find a company that can redye the seats for you. Those stupid kits aren't worth a crap, and you will not be happy with the results. You'll have to redye the entire seat for it to look right, because the color won't match. To give you an idea, if I were to color change your leather seats, it would probably run you $150 - $200, professionaly done, with peace of mind that it was done correctly and it will last. Again, go find an interior company that can do it for you.
Also, in reply to Rt1Rebel, the spray mentioned is simply called vinyl boat spray. It will sorta blend to match the color when used. You could try it, but good luck getting it off your seats if you don't like it. My other concern with using that, is that your leather won't feel like leather anymore, it'll be rougher, and not as smooth. It might also look dull on your seats, because there's no topcoat.

I could steal a couple of those plastic runners my g-ma has all over her house to protect her ugly green carpet for you, she probably wouldn't even notice LOL. White carpet would look sweet, I hope you never have to get in it during inclimate weather though, it would be a major bi#ch keeping it clean.
