I just bought my 2006 Black GT. I had the Simoniz put on it from the detailer; my question is: is it ok to wax over the Simoniz? When I wax I use Cherry Wet which sure adds a deep shine to my '68 and my '92 feature car convertible.

There is nothing special about Simoniz, Auto Armor or any other products dealers or detailers use. you can wax over it if you want.
