Default carbureted or EFI???

This is my first time on this board and from what i have seen so far, this place has a lot of information about a lot of things. I look foward to learning a lot while on this board. Anyway onto my question. I am about to a full rotisseri resto to a 1968 fastback. I cant decide if i want to go with a carburated or fuel injected engine. I do know that i want a 351W with a 427 stroker. I think the exact block is a 351W svo 4 bolt. My goal is to have about 450-550rwhp and put a 100-150 shot on top. I do not plan to take the car to the track a lot. I have just always wanted a big cube engine with a big cube sound. What are the pros and cons of each? which would be better for the set-up I want? I'd say my budget is about $8000 or so

you best bet is the carb since you want nirtis. here is a link for you. The crate 427 engines put out close to 600hp
