Changing rear differential

Getting the rear differential changed, had a leak in a seal, some noise etc. My Bullitt had been modified before I bought it to 3.73. If they (the dealer) changes my rear dif, should they replace the gears also, should that be included? I want the stock 3.27 back in it. I have not heard back from them yet ----

your speedo will be off, you'll need to get it tuned.

I must plead some ignorance, I am a driver not a mechanic -- the rear dif is the gears, right? The speedo was already off, I dont think it was ever recalibrated to begin with, it was about 7-8 mph fast.
