600 horse is gonna turn that 302 block into two 4-bangers in no time. You generally don't want to push the 5.0 past ~450 flywheel hp, they like to split themselves after that
imma just go with the 351, cuz something in the neighborhood of 600 sounds nice, and if that old 302 out in it right now can't withstand it, then imma just junk it.
