Default Taurus fan control/wiring questions

Greetings!
I'm a newbie here and I hope you don't mind that I don't even have a Mustang. I'm looking for the most suitable way to wire/control the two-speed Taurus fan I've put on my 88 Isuzu Trooper, and I've read that this is a somwhat popular mod for Mustang guys.
I initially had it wired for high-speed only, constantly hot, on 180* temp. switch. This had no problems keeping the engine nice and cool, but on 100+ degree days, my 60A alt. could not keep up. I then replaced the alternator with a Ford G3 (actually, I replaced the smog pump with it) and haven't had any problems, but the fan is pretty loud, especially when it's running for a few minutes after I cut the engine off.
Next, I wired it low-speed only, constantly hot. This STILL keeps the engine cool and is obviously much quieter and easier on the charging system, but I sure would love to have high-speed available and ready to kick on if need be.
Here's my dilemma:
I have not found an aftermarket fan controller for dual-speed fans...anybody know of one?
Other mods I have in the works (IM coolant bypass) will allow me to place as many temp. sensors/switches as I want, but since you don't want the high and low speed on at the same time, how can I have two switches?
Ideally, I would like to have the low speed constantly hot (so it will continue to run after the engine is shut off), low-speed on with A/C, and low speed on at 180*. Additionally, I'd like to have high speed come on at...I don't know...maybe 190 or 195? 200? Hopefully, I'll never actually need it, but wouldn't it be nice?
On a side note, for those of you who've gone electric, I'd love to know what you think of the performance difference. In the case of my Trooper with the 2.6l 4-banger (rated at 120 HP, I believe), I think the performance increase can be best described as "perceptible". With this engine, I'll take all the "perceptibles" I can get!
Any thoughts, comments, suggestions appreciated.

This is also the preferred rad installation to hybrid Z cars. Seeing as you can install as many sensors as you want, it should be relativly simple. I've got my low set at 160 and my hi set at 185. Keep in mind, the switch works off heat. IE: it makes contact when it reaches a certain temp. The hot wire should go to the temp switch then the other wire to the fan. I always install relays in almost every system in the car. It's cheap insurance.

Thanks for the reply. That's pretty much what I'm planning on doing. But, the million dollar question is:
How can I make the low speed shut off when the high speed comes on? I've read that the two will "fight" each other and cause excessive current draw.

the answer is relays. when the temp gets high enough to activate the hi speed, it cuts off the low speed. I've got the wiring diagram somewhere, I just have to find it.
