Default 3k stahl questions

whats a good stahl for a street car? everyone i talk to says 3000 stahl but since i know ill be driving the car every weekend on the road and maybe twice a month ill be taking it to the track. so this will be more of a street car then track. so to me i think 3000 would be too much. Also im not that knowledgeable about the converters so one of my questions is does the stahl work in all gears or does it just work in 1st. so in other words could i put my tranny in 2nd and start normally when driving on the street and when i want a quick launch drop it in 1st?
one more quesion...whats a good brand for converteres and where's a good site to buy em from?
thanks to anyone who can help me with my questions

If it's a get in and drive everyday street car... 3000 is too much.
Your best bet is to call the place that you decide on, tell them whats done to the car, the purpose of the car and let them make it for you.
