Default 1969 Fastback restoration

Hey there,
I'm looking to restore this 1969 Fastback as a Father-Son project over the next year or so. I'm currently deployed to Afghanistan but have been wanting to do this with my Father for quite some time, and now after being gone for several years, I'll actually be able to start.

Thing is, I don't know too much about the specifics of Mustangs under the hood, especially the ones from before my time.

I know this has a rusted out 302 (non-running) in it right now, but I'm looking to replace it with a 351Cleveland. Aside from general motor/tranny intellect, is there anything special I should know of or do for this?

I won't be back in America until mid April after this tour ends, but I'm trying to gather as much information and knowledge before hand so I can jump right into it.

Any tips, information, or helpful knowledge from personal experiences would be greatly appreciated. Thanks!
