Default Engine stuttering?

I'm new to this forum so I'm not sure if this is the right spot. Anyways, so my problem is I just recently bought a 1968 Mercury Cougar, I was hoping to get help since they are very similar and this is an engine problem, which is the engine seems to stutter at high rpm. When I start it up it sounds rich and good and normal driving is fine, but once I take off and push the pedal down right away it speeds up then stutters a bit(like its coughing) and once I slow down it's a little touchy and then its fine. I'm not sure if it's because it's been sitting for a while (what the previous owner said) and never really has gone fast or if it's something else. I'm not technical at all, this is my first car and it's bothering me that this happened. I don't remember any other times I drove it that it happened before. Idk if this will help but its a 302 4v. Maybe theres nothing wrong and im being paranoid from any sound it makes...idk. So anyone know whats wrong? thanks
