Default cabin odor

2017 GT 5 liter; when I "stand on it" I typically get a cabin odor for a minute or two; it dissipates but I wasn't sure what this is about. Catalytic converter? is this something I should be concerned with? No performance issues or warning lights. Thanks.

My V6 did that for a while, but it eventually stopped. I think it's the various coatings and residues found on engine parts that start to burn when subjected to heat produced when the engine is working hard. I know my exhaust manifold looks different now than it did when I first brought the car home.
