Cooling Issue

Default Cooling Issue

Long story short, I put in a new radiator (aluminum champion), new thermostat (two times now , NOTHING but trouble. Blew a hose after the first replacement. Took out the thermostat. Gauge reads VERY cool, oil pressure normalizes, put it in drive, oil pressure sensor jumps, normalizes, so does temp. Replaced thermostat again, same issue, although I heard a lot of pressure in the top hose so I just took the thermo out again, put in the old, and the gauges still jump. Any ideas would be so great, I would really appreciate it!

I should say this is a 66 with a 289 with maybe 2k on the engine. Thanks!
